These Coffee Baked Oats are a breakfast treat. The addition of a little strongly brewed coffee or espresso takes them to the next level.
If you haven’t tried baked oats yet, I would highly encourage it! A fun way to mix up traditional oats, and the combinations of flavors are endless. Hope you enjoy these as much as I do!


Coffee Baked Oats
Ingredients
- 1/2 cup old fashioned oats (I like to soak mine overnight in water for easier digestion, and drain in the morning)
- 1/2 ripe banana, mashed
- 2 TB milk of choice (add another 2 TB if oats aren’t soaked)
- 1/4 cup strongly brewed coffee or espresso
- 1 TB almond butter
- 2 tsp coconut sugar
- 1/2 tsp baking powder
Instructions
- Preheat oven to 350.
- Combine all ingredients in a bowl.
- Grease a 6 oz ramekin or any small oven safe dish with coconut oil. Pour mixture in.
- Bake for 25 minutes.
- Serve with maple syrup on top if desired.
