I have to say, baked oats are officially becoming my new favorite weekend breakfast. A step up from my regular week day oats – they are truly a treat!
And blueberry muffin anything? I mean, come on 🙂 You can’t go wrong!
The trick here is using frozen wild Maine blueberries. I buy these at Costco and always have a bag in the freezer. Wild blueberries are smaller and SO much sweeter than regular blueberries. Now that I’ve gone wild, there’s no turning back!
On Instagram, you guys have asked which ramekins I use for my baked oats and single serve desserts. I bought these 6 oz. ramekins from Amazon and love them. I also use them as prep bowls when cooking, or for serving ice cream. So many uses!
Anyway, next time you’re looking to switch up your regular morning oats, think of this baked beauty! I hope you love it!
Blueberry Muffin Baked Oats
Ingredients
- 1/2 cup old fashioned oats (Optional: For easier digestion, soak oats overnight, then rinse and drain the morning)
- 1/2 ripe banana, mashed
- 3 TB milk of choice (regular milk, almond, or coconut all work great!)
- 1 TB almond butter (or other nut butter of choice)
- 1 tsp maple syrup
- 1/2 tsp baking powder
- 1/4 tsp cinnamon
- 1/4 tsp vanilla extract
- 1/4 cup frozen wild blueberries
Instructions
- Preheat oven to 350.
- Combine all ingredients except blueberries in a large bowl.
- Stir in blueberries.
- Grease a ramekin/small baking dish with coconut oil. Pour in mixture.
- Bake for 25 minutes.
- Top as desired! I used extra almond butter, blueberries and chopped pecans.
