Carrot cake in cookie form? Yes please! These cookies are super soft and just all around delicious!
They are paleo, gluten free, dairy free and much lower in sugar than traditional carrot cake. No mixer required, just mix everything in a bowl and refrigerate the dough to set before baking.

Ingredients
- 1 mashed ripe banana (1/2 cup)
- 1 egg, at room temperature
- 2 TB coconut sugar
- 1 tsp vanilla
- 2 tsp melted coconut oil
- 1/3 cup peeled, grated carrot
- 1 cup almond flour
- 2 TB coconut flour
- 1 tsp cinnamon
- 1/2 tsp baking soda
- 1/4 tsp nutmeg
- 1/4 tsp salt
- Optional: 1/2 cup raw pecans, toasted
Instructions
- In a medium bowl, combine banana, egg, coconut sugar, vanilla, coconut oil and carrot.
- In a small bowl, whisk together almond flour, coconut flour, cinnamon, baking soda, nutmeg and salt.
- Add dry ingredients to wet ingredients and stir to combine.
- Stir in toasted pecans (if using).
- Refrigerate cookie dough for 30 minutes.
- Line a baking sheet with parchment paper. Scoop 14 heaping tablespoons of dough onto cookie sheet.
- Flatten cookie dough balls slightly with your fingers.
- Bake at 350 for 15 minutes.
- Let cookies cool on baking sheet on a wire rack.
- Store leftovers in the fridge.
